So i havent blogged in a while and i figured i would today since well, its my husband and my 3 year Anniversary!!!! Ahhh time is flying by like crazy. So weird to think that this time 3 years ago i was most likely cutting my wedding cake. possibly. So, three years in and my husband still gives me those butterflies that he gave me the day i met him!!! gag me i know.. but its true. So we are going to carry on the tradition and go to our spot which for some of you who dont know, is sea world. We had our first date there, our honeymoon there, anniversary number one there, and well now anniversary number 3 is there too. Im very excited this year because good friends of ours will be joining us this year... actually one of them Kevin, was there on the first date with us, so its fitting that he be there where it all started! Afterwards we will be going to the gaslamp, or whatever its called in SD to club it up! yay! like i said im pretty excited.
Being that it is my Anniversary and all i want to thank everyone for the kind wishes to me and my husband today. I truly feel blessed to have you all in my life, you all dont know how much it means to get the nice facebook comments, or text messages throughout the day. And it really shows who cares and who obviously doesnt. So again to those who care i give my deepest thanks.
other than that, im so excited for this summer being that i finally have a REAL job, and weekends off, i feel like i can actually go and do stuff!!!! Beach camping on my birthday will be right around the corner, and i can not wait!!! i definitely plan on spending my summer busy! Lakes, beaches, camping, hiking, traveling, you name it and i want to do it! Even you Vegas!!!! Even you!!! lets do it right this summer everyone Time to have a blast, the weather is getting there already and im soooo ready for it! Bring on the HEAT!!!!!

2011 has come to an end
First off, Happy New Year Everyone!!! Is it just me or does it seem like just yesterday we were saying good bye to 2010 and welcoming 2011?? Amazing how time flies dont it!?!? 2011 was a pretty good year for me, especially at the end, and now im excited to see what 2012 is going to hold for us. Being as i dont often get to stay in touch with people i figured id fill ya in on the past year. 2011. Mike turned 27 at the end of Jan, yea hes getting olllld. jk love you babe! Even though he is an old man he continued to work hard on his electrican work, as well as decide to go back to college!!!!Yea i abrely saw him but it was ok bc the more he was gone, the more i missed him and was excited to have him come home. WE celebrated our 2nd Wedding Anniversary in March. WEnt to Hollywood, i know not a normal spot for us, but it was still fun, and im excited for our upcoming 3rd Anniversary!!! Hopefully the weather will be nice and we can go back to SeaWorld. I turned 25, in April. wow. now im an old lady!!! haha!! Nothing too exciting went on for the bday... in fact i dont think we did anything at all, oh wait i was sicker than a dog!!!! Yea not so much fun, i now get flu shots... nobody should go through what i went through. My friend Korby got Married in Aug, and her wedding was a blast, but then again how could it not when she had the best wedding party!! Congrats again lady!!! September Mike and Myself were recognized in front of the board of supervisors for ventura county, how exciting that was , we were recognized for all of our Volunteer work we do with the FD. WEll the whole group was, but they did a lil story on us! It was cool. My Nephew Mason turned 1 this october!!!! It has been such a cool year watching him grow and learn and man oh man when he gives you that smile of his, when he remembers who you are, melts my heart! And now as i speak of the end of the year, which for me was the most exciting, was FINALLY after 8 long years i get hired by the Ventura County Fire Department!!!! Everything ive EVER worked so hard for finally was mine, now im only a part time, extra help, but who knows what it could turn into, im getting the knowledge and experience i need to make my career a little easier to grasp and claim as MINE! Its one of the best feelings i have ever experienced, and now as im almost a month into the job, i am actually finally feeling the excitement of being hired. Mike completed his EMT class as well and is well on his way to being a EMT. He has one more test to take before he is nationally certified, and i have no doubt in my mind that he will pass it with flying colors. Hes good at that test taking crap! lol. So if anyone who reads this is ever in need for an ambulance only hope mike shows up at your door. He will take very good care of you. So as the year has ended ive learned many new things about not only friends but family. Everyone always says Family doesnt have to be blood, and ive recently found out that , that saying is 100% true. With that being said, ive decided to let some of my "family" go and move on with my life. I learned that they arent really family at all ,and to me i dont need that in my life. Im going to make sure i surround myself with Happy, Positive, Non Dramatic, people in 2012. Im gonna do whats right and good for me and my Hubby. I know who my true friends and family are and im very thankful to have you in my life... all the others can kick rocks!

Garlic and Herb Chicken with Romesco Sauce
Ingredients:
5 Garlic Cloves
1/2 cup Extra Virgin Olive Oil
1/4 cup fresh flat leaf parsley leave
salt and pepper
1/2 tbsp thyme
4 -6 to 8 oz boneless chicken breasts
1 cup sliced almonds ( i didnt put any in bc we arent fans of almonds)
1 slice sandwich bread
1 roasted red pepper
1/4 cup red wine vinegar
1 plum tomato
What to do:
In a food processor combine 3 of the garlic cloves, 1/4 EVOO , the parsley leaves, salt, pepper, and thyme. Process the ingredients to a somewhat smooth paste. Scrape the contents of the processor over the chicken and coat in mixture.
Preheat large skillet over medium heat then add seasoned chicken breasts to the skillet and cook on each side about 5 mins. ( if your chicken is thick i cooked em till it was browned on stove then put in oven for 35 mins at 420)
While chicken is cooking toast almonds in skillet (if u decide to use them )
Toast the slice of bread till browned, and then rip apart the sliced toast and add to the bowl of the food processor ( no need to clean out bowl of processor, being as the flavors from chicken mixture will help with the sauce)
add roasted peppers, the remaining 2 garlic cloves, red wine vinegar, plum tomato , salt and pepper. Start processing and while the machine is running pour in the remaining 1/4 cup of EVOO in a slow steady stream. Process until ingredients are ground and the mixture is pretty smooth.
now what i did was make spaghetti, and after draining, i put EVOO , garlic salt,powder, cloves,dillwedd, oregano leaves, instead of sauce.
then i put spaghetti on plate, chicken ontop and the romesco sauce ontop of it all. Dump it on, so it will also form as a spaghetti sauce for the spaghetti.
Soooo Goood trust me.
A few notes.
i didnt use almonds, i used minced garlic about a tablespoon total instead of cloves, and the thyme was already ground, and in a spice jar... so Good luck i hope you guys like it!!!

2011
Well here we are about n4 months into 2011 and it seems to me like its goin by pretty fast already. I cant wait for the SUmmer to be here, its my favorite season of them all and im so excited to have a busy and fun one!!!
April i turn 25. holy cow, im getting old!!! Still no kids yet, im not really in a rush for any, id like to pay off some more bills before we add another huge one to the list!! I know your never really ready financially but we would like to be a lil more prepared. DOnt get me wrong ive been wanting one like crazy and have actually bought childrens clothes for when i do have one. *hey if its on a good sale gotta get it right then and there right?* hoping i get a boy bc thats all ive been buying clothes wise. lol. If anything im sure someone i know iwll have a boy and i can always gift them to them if i dont get lucky and get a boy. haha. but like i said, no rush.. i will admit though i love hanging out with Rachels son Mason. its been definately good practice!! Hes so damn cute so not only am i mommy in training, im enjoying my time with them while they are here! I love being Auntie Tiffabeee. Ive never really gotten the chance to be a Auntie and i love that Rach and her family is ok with me being "auntie T" that kid has my heart for sure. He melts me when he smiles and man o man rach are we gonna have our hands full when he gets older! Im fully prepared to beat girls off with A STICK!! a picture of him is below.
SO this summer, im fully ready to have bbqs, pool time, go to the beach, camp, lakes, rivers, amusement parks, and just stay busy and get my nice tan back!!! Im so white its disgusting! But a good thing about us Italians is we tan pretty well!!! yay us!
Im still working at Kohls (hate it) but its better than nothing, im waiting to hear back from a couple places for new jobs so i can get outta retail for good. I think 7 years of it is long enough ( not 7 in one place but 7 total) ive had enough of it....
March 21st was mine and Mikes 2 year wedding Anniversary!!! WE couldnt do our traditional Sea World trip bc of the rain but we still had a amazing day of adventuring out to Hollywood. I cant really understand why people are obsessed with it there.... its not pretty and smells really dirty. i think i washed my hands at least 15x when we got back from there just because i felt really gross. i dont know... thats just me.
anywho i guess i got bored and felt like blogging, but i think ive rambled long enough!!! If i dont talk to you before then, have a good weekend!!! and lets plan something this summer!!!!!

My 2010 an eventful year!!!

Well, my Husband and I celebrated our ONE year Wedding Anniversary March 21 2009. The year went by so fast, i cant believe 2 years is coming up!!! In April he got out of the United States Marine Corps after 5 1/2 long years he decided that he wanted to expand his verizons and look into something new. So he took on the Apprenticeship for Electricians in Ventura County, so i was pretty excited to be moving back to my home county. We moved to Moorpark in June and he started working hard everyday. I unfortunately wasnt able to find a job right away but it was nice being able to get back into Volunteering with the FD. It was nice to be back into doing what i love most. My best friend Rachel got Married April 29 2010 to a pretty cool guy named Brett, and they had a lil one on the way. My Nephew Mason Jay was born on October 22 2010 at 9:12 pm at the Naval Hospital on the 29 Palms base. I went out and visited all of them while they were at the hospital the day after his birth. I stayed with Rach in the hospital all night to help her take care of him and so she could get some rest. Even though it was tiring it was well worth it getting some quality time with my new nephew. Hes the cutest lil boy ever!!
Thanksgiving came and Mike made a yummy dinner as usual companied by my Mom and Dad and Brother and one day Sister in Law, it was a nice dinner and im glad we got to spend it with loved ones. Not too much else exciting happened during the year, went to Prowler shows as usual and had some fun meeting cool new people at the shows. (Steven Adler from Guns n Roses has to be my favorite out of all we met) Oh yea a week before Thanksgiving Mike got laid off from work due to no projects in the future for his company, and i ended up finally getting a job the begining of Nov at Kohls... not the choice place to work but it works for now. Seems like me and mike switch off from him working and me not to me working and him not. Hopefully he will be getting picked back up and start working early again in 2011.
BEing as i think ive rambled long enough here, i will end this with im excited for 2011 to come, i cant wait to see what it has in store for us. I hope everyone has a happy and healthy christmas and New year!!!
